Amarantidis farm is located on a farm in Kalliphytos of Drama, with an area of 10 acres and a second one in Lykodiaselo (Kourtalar) at an altitude of 900 meters. At Amarantidi Farm, the aim is always to ensure quality at all stages of production with respect for nature. For this reason, during the summer months the animals are in Lykodiaselo, grazing freely on the slopes of the mountains and feeding on food produced by Greek nature (oregano, mint and various other aromatic plants). corn, barley, oats, clover produced by neighboring farms of Papadopoulos Charalambos.
The activity of the Amarantidi farm moves along 2 axes:
• Primary production and breeding
The production of the best quality meat is sold at the Amarantidis butcher shop, located at the corner of Ioustinianos and Melenikos in Drama. There are all kinds of meats for the everyday table, as well as dry aged steaks in a dry ager refrigerator.
Dry curing is the process by which large cuts of meat are aged longer than necessary before being cleaned and cut into steaks. This process helps the meat acquire a deeper flavor while also making it more tender compared to fresh. However, in order to carry out this whole process, special conditions are needed for the meat and in a specific environment (dry ager refrigerator).
